Ingredients
- 2 tablespoons unsalted butter
- 1/2 yellow onion, chopped
- 2 cloves garlic, minced
- 2 stalks of celery, sliced thinly
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 4 cups chicken broth
- 2 chicken breasts, boneless skinless
- 2 carrots, sliced
- 1 teaspoon fresh thyme
- 8 ounces egg noodles, cooked 1 minute shy of directions
Instructions
- Begin by adding butter to a large dutch oven over medium heat. Once melted, add onions, garlic, celery, salt and pepper.Cook the ingredients for 3-4 minutes until they become translucent. Next, pour in the broth, chicken, carrots, and thyme. Bring the mixture to a boil and then reduce to a simmer. Let it simmer for 20 minutes.
- Remove the chicken from the soup and use two forks to shred it. After shredding the chicken, return it to the soup. Add the cooked pasta to the soup as well. Finally, serve the soup while hot.
