Ingredients
- ΒΎ cup plain whole-milk Greek yoghurt
- ΒΌ cup milk
- 2 eggs
- 2 tablespoons unsalted butter (melted and cooled;plus more for cooking)
- 1 cup all-purposeflour (or whole-wheat flour; if using whole-wheat, add 2 tbsp more milk)
- 1 tablespoon sugar
- 2 teaspoons baking powder
- ΒΌ teaspoon salt
- 1 cup add-ins such as blueberries, diced strawberries,diced bananas, diced peaches, or chocolate chips (optional). You can stir 1 cupinto the batter or sprinkle a few pieces of each on each pancake if you prefer
Instructions
- In a medium bowl, combine the yoghurt, milk,eggs, and butter by whisking until the mixture is smooth.
- Add the flour, sugar, baking powder, and salt to thebowl and gently whisk to combine.
- If desired, mix in add-ins such as fruit orchocolate chips. You can add 1 cup to the entire batch or add them to eachpancake individually after you've spooned the batter onto the skillet.
- Heat a large nonstick skillet over medium heatand add a small amount of butter, swirling it around to coat the pan
- Spoon out about ΒΌ cup of batter for regular-sizedpancakes or 2 tablespoons for mini pancakes onto the skillet. Cook for 3-4minutes, or until bubbles start to form on the surface and the edges are set.
- Flip the pancakes over with a spatula and cook for an additional 3 minutes.
- Serve the pancakes immediately or place them ina 200-degree Fahrenheit oven on a baking sheet to keep them warm while you cookthe rest of the batch.
- Add a small amount of butter to the skillet asneeded to prevent sticking
- Serve the pancakes warm with your choice oftoppings, such as applesauce, fruit puree, maple syrup, or nut/seed butter
