Ingredients
  

For the cupcakes:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

For the cream cheese frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  • In another mixing bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla extract, and whitevinegar until smooth.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Spoon the batter into the cupcake liners, filling them about 2/3 of the way full.
  • Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cupcakes from the oven and allow them to cool completely before frosting.

For the cream cheese frosting:

  • In a large mixing bowl, beat the cream cheese and butter together until smooth.
  • Add the powdered sugar and vanilla extract, and continue to beat until the frosting is smooth and creamy.
  • Frost the cupcakes as desired and enjoy!
