- 4 large vine tomatoes, cut into irregular wedges
- 1 cucumber, peeled, deseeded, then roughly chopped
- ½ a red onion thinly sliced
- 16 Kalamata olives
- 1 tsp dried oregano
- 85g feta cheese, cut into chunks (barrel-matured feta is the best)
- 4 tbsp Greek extra virgin olive oil
Cut 4 large vine tomatoes into wedges and chop 1 peeled and deseeded cucumber. Thinly slice 1/2 a red onion and add it to a large bowl along with the tomatoes, cucumber, 16 Kalamata olives, 1 tsp of dried oregano, 85g of feta cheese chunks, and 4 tbsp of Greek extra virgin olive oil.
Lightly season the salad with salt and black pepper. Serve the salad with some crusty bread on the side to soak up all the delicious juices.
