- 2 large boneless skinless chicken breasts (about12 ounces each)
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon fennel seed, lightly crushed with aknife
- 2 tablespoons olive oil
- Koshersalt
- 4 soft hoagie rolls, split
- Four1/4-inch-thick slices of mozzarella
- 1 large tomato, sliced
- 1/2 cup prepared pesto
Preheat a grill to medium-high heat
Cut the chicken breasts in half crosswise and use a meat mallet to pound each piece to an even thickness of approximately 3/4inch. In a medium bowl, mix the chicken with 1 tablespoon of oil, 3/4 teaspoonof salt, crushed red pepper, and fennel seed
Brush the inside of the rolls with the remainingtablespoon of oil.
Grill the chicken for 8 to 9 minutes on eachside, turning once until fully cooked. Add a slice of mozzarella cheese on topof each chicken piece during the last few minutes of cooking
Grill the rolls with the oiled side down for around1 minute, or until lightly charred and warmed.
Spread some pesto on the bottom half of each roll. Add a slice of tomato, a piece of chicken, the remaining pesto, and the tophalves of the rolls.
