Instructions
Preheat the oven to 375°F (190°C).
In a 9x13 inch baking dish, melt the butter in the oven.
In a medium mixing bowl, combine the flour, 1 cup of the sugar, baking powder, and salt.
Add the milk and vanilla extract to the dry ingredients, stirring until just combined.
Remove the baking dish from the oven and pour the batter over the melted butter.
In another bowl, combine the sliced peaches, cinnamon (if using), and remaining 1/2 cup sugar. Mix well.
Pour the peach mixture over the batter, spreading it evenly.
Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes outclean.
Allow the peach cobbler to cool for 10-15 minutes before serving with a scoop of vanilla ice cream, ifdesired.
