large eggplant, diced

zucchinis, diced

yellow onion, diced
1
red bell pepper, diced
1
yellow bell pepper, diced

cloves garlic, minced
4
ripe tomatoes, diced
2
tablespoons tomato paste
1
teaspoon dried thyme
1
teaspoon dried basil
Salt and pepper to taste

tablespoons olive oil
Fresh basil leaves for garnish
Instructions
Preheat oven to 375°F.
In a large skillet, heat olive oil over medium-high heat. Add onion and garlic and cook until onion istranslucent, about 5 minutes
Add diced eggplant and cook for 10 minutes, stirring occasionally.
Add zucchinis, red and yellow bell peppers and cook for another 10 minutes.
Add diced tomatoes, tomato paste, thyme, basil, salt and pepper. Stir well.
Transfer the mixture to a large oven-safe dish and bake in the preheated oven for 30-40 minutes or untilvegetables are tender
Serve hot, garnished with fresh basil leaves.
