beef brisket (10-12 pounds)

black pepper

paprika

brown sugar

tablespoons garlic powder

tablespoons onion powder

tablespoon cumin

tablespoon chili powder

tablespoon cayenne pepper

wood chips (hickory or oak)
Instructions
Preheat your smoker to 225°F.
In a bowl, mix together salt, pepper, paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, and cayenne pepper
Trim the excess fat from the brisket and rub the spice mixture all over it.
Let the brisket sit at room temperature for 30 minutes to 1 hour.
Soak wood chips in water for 30 minutes.
Place the brisket on the smoker grate fat side up.
Add the wood chips to the smoker.
Smoke the brisket until the internal temperature reaches 165°F (about 8-10 hours).
Wrap the brisket in foil and return to the smoker.
Smoke until the internal temperature reaches 195°F (about 2-4 hours).
Remove the brisket from the smoker and let it rest for 30 minutes.
Slice against the grain and serve.
