In a large skillet, cook the chopped bacon over medium-high heat until crispy. Remove the bacon from the pan and set it aside on a paper towel-lined plate.
Add the onion to the pan with the bacon fat and cook until softened, about 5 minutes. Add the garlic and cook for another minute.
Add the diced sweet potatoes to the pan and cook for 5-7 minutes, stirring occasionally, until they start to soften
Add the diced apples, paprika, thyme, salt, and pepper to the pan and cook for another 5 minutes, or until the sweet potatoes and apples are tender
Add the bacon back to the pan and stir to combine.
Transfer the mixture to a baking dish and bake for 15-20 minutes, until the top is lightly browned and crispy.
