Ingredients
- 1 can of wild salmon, drained
- 1/4 cup of almond flour
- 1/4 cup of finely chopped red onion
- 1/4 cup of finely chopped celery
- 1/4 cup of finely chopped red bell pepper
- 1 egg
- 2 tablespoons of chopped fresh parsley
- 2 tablespoons of chopped fresh chives
- 1 tablespoon of Dijon mustard
- 1/2 teaspoon of paprika
- 1/4 teaspoon of garlic powder
- Sea salt and black pepper, to taste
- 2 tablespoons of coconut oil
Ingredients for Avocado Aioli:
- 1 ripe avocado
- 2 tablespoons of mayonnaise
- 1 tablespoon of lemon juice
- 1/4 teaspoon of garlic powder
- Sea salt and black pepper, to taste
Instructions
- In a large mixing bowl, combine the drained salmon, almond flour, red onion, celery, red bell pepper, egg , parsley, chives, Dijon mustard, paprika, garlic powder, sea salt, and black pepper. Mix everything together until well combined.
- Form the salmon mixture into 8 small patties.
- While the salmon cakes are cooking, make the avocado aioli by combining the avocado, mayonnaise, lemon juice, garlic powder, sea salt, and black pepper in a blender or food processor. Blend until smooth.
- Serve the salmon cakes hot with a dollop of avocado aioli on top.
