Ingredients
- 1 large sweet potato, peeled and cubed
- 1 can black beans, drained and rinsed
- 1 red bell pepper, sliced
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- Salt and pepper to taste
For the Lime Dressing:
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F.
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper. Spread the cubes out in a single layer on a baking sheet and roast in the oven for 20-25 minutes, or until tender
- In a small bowl, whisk together the lime juice, olive oil, garlic, cumin, salt, and pepper to make the dressing.
- In a serving bowl, layer the roasted sweet potatoes, black beans, sliced red bell pepper, and avocado. Drizzle with the lime dressing and sprinkle with chopped cilantro
- Serve immediately and enjoy!
