Ingredients
  

VegetableStir Fry:

  • 1 large carrot, sliced
  • 1 cups mediumbroccoli florets
  • 8 oz can baby corn spears, drained
  • 8 oz mushrooms (white or brown), sliced or quartered
  • 1 whole pepper (red, yellow, or orange), seeded and sliced
  • 2 Tbsp cooking oil, (extra light olive oil or canola)
  • 2 Tbsp unsalted butter
  • 3 garlic cloves, peeled and minced
  • 2 tsp ginger, minced

StirFry Sauce:

  • 1/4 1/4 chicken broth, (or vegetable broth for vegetarians)
  • ½ tsp cornstarch
  • 3 Tbsp low sodium soy sauce, (use Tamari for gluten-free)
  • 2 Tbsp honey
  • ¼ tsp hot sauce, optional

Instructions
 

  • Begin by heating a large non-stick skillet or wok over medium heat and add oil to it. Once the oil is hot, add the vegetables and stir-fry them for about 3 minutes or until they are crisp-tender. Next, add the butter, garlic, and ginger to the skillet and cook until they become fragrant.
  • In a separate small bowl, combine all the ingredients needed to make the stir-fry sauce. Once the sauce is well mixed, pour it over the vegetables that are already cooking in the skillet and stir well to ensure that the vegetables are evenly coated with the sauce.
  • Lower the heat to medium/low and continue cooking the vegetables for another 3-4 minutes, until the sauce thickens and the vegetables reach the desired level of tenderness. Make sure to stir the vegetables occasionally while cooking to prevent them from sticking to the skillet and ensure that they are evenly cooked and coated with the sauce.
