  • 4 salmon fillets
  • 1 bunch of asparagus ends trimmed
  • 3 tablespoons olive oil
  • 1 lemon zested & juiced (more for garnish)
  • 5 garlic cloves minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons fresh parsley* chopped

  • Begin by preheating your oven to 400F (200C). Next, line a baking sheet with aluminum foil

  • Take a medium-sized bowl and combine the following ingredients: olive oil, lemon zest, lemon juice, garlic cloves, salt, pepper, and parsley
  • Spread the mixture you created in step 3 over the tops of the salmon and asparagus. Make sure it's evenly distributed.
  • Bake your salmon and asparagus in the preheated oven for 12-15 minutes. Keep in mind that the baking time may vary based on the thickness of your salmon.
  • After the cooking time is up, remove the baking sheet from the oven. Check the salmon and asparagus with a fork to ensure they are both soft and tender. If everything is cooked to your liking, it's ready to serve!
