Ingredients
- ¼ cup olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 stalks of celery, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 cups dry lentils
- 8 cups water
- 1 14.5 ounces can of crushed tomatoes
- ½ cup spinach, rinsed and thinly sliced
- 2 tablespoons vinegar
- salt to taste
- ground black pepper to taste
Instructions
- Begin by heating oil in a large soup pot over medium heat. Once the oil is heated, add onions, carrots, and celery to the pot. Cook and stir the vegetables until the onions are tender, which should take around 3 to 5 minutes.
- Next, add garlic, bay leaf, oregano, and basil to the pot. Stir the ingredients together and cook for another 2 minutes.
- Now, it's time to add the lentils to the pot.Pour in water and add tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer until the lentils are tender. This should take at least1 hour.
- When the lentils are fully cooked, add spinach to the pot and stir until it wilts.
- Once the spinach has wilted, add vinegar to the soup and season with salt and pepper. Taste the soup and adjust the seasoning as needed.
- Finally, your lentil soup is ready to serve! Ladle it into bowls and enjoy it while it's hot.
