Ingredients
- 4 boneless chicken breast fillets, skin on
- 85g frozen leaf spinach, defrosted
- 85g feta cheese, crumbled
- 2 tbsp olive oil
- 2 tbsp pine nut
Instructions
- Begin by loosening the skin from the chicken. Drain the spinach using a sieve and remove as much water as possible. Combine the drained spinach with the feta cheese and a pinch of black pepper. Stuff the mixture between the flesh and skin of the chicken, making sure to smooth the skin over the stuffing. Lastly, season the chicken with salt and pepper.
- Heat some oil in a frying pan that has a lid. Add the chicken to the pan, making sure that the skin side is facing downwards. Fry until the skin becomes brown. Then, flip the chicken over and cook the other side. Next, add the pine nuts and fry them until they become lightly toasted. Afterward, add 6 tablespoons of water and cover the pan with a lid. Allow the chicken to cook for approximately 15-20 minutes or until it is thoroughly cooked.
