Deliciously Fresh and Healthy Tiramisu

Ingredients
  

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup heavy whipping cream
  • 2/3 cup mascarpone cheese
  • 1 1/2 cup strong brewed coffee, cooled
  • 1/4 cup coffee liqueur (such as Kahlua)
  • 24 ladyfingers
  • 2 tbsp cocoa powder
  • Shaved chocolate, for garnish (optional)

Instructions
 

  • In a large mixing bowl, whisk together the egg yolks and sugar until thick and pale yellow in color.
  • In a separate mixing bowl, beat the heavy cream until stiff peaks form.
  • Add the mascarpone cheese to the egg mixture and whisk until smooth.
  • Fold in the whipped cream until the mixture is well combined.
  • In a shallow dish, combine the cooled coffee and coffee liqueur.
  • Quickly dip each ladyfinger into the coffee mixture and arrange them in a single layer in the bottom of a9x13 inch baking dish.
  • Pour half of the mascarpone mixture over the ladyfingers, spreading it evenly.
  • Repeat with another layer of soaked ladyfingers and remaining mascarpone mixture.
  • Sift the cocoa powder over the top of the tiramisu.
  • Cover the dish and refrigerate for at least 4 hours, or overnight.
  • Before serving, garnish with shaved chocolate, if desired.
