Ingredients
  

Forthe grains

  • ¾ cup quinoa
  • ¾ cup bulgur wheat
  • 3 cup water/stock
  • 1 tsp salt

Forthe chicken

  • 4 chicken breasts (skinless and boneless)
  • 2 tbsps olive oil
  • 3 tbsps lemon juice
  • 3 garlic cloves crushed
  • 2 tsp oregano
  • 2 tsp salt
  • 1 tsp black pepper

Forthe grain bowls

  • tzatzikisauce
  • Fetacheese cubed
  • Kalamataolives
  • Slicedcucumber
  • Halvedcherry tomatoes

Instructions
 

  • Combine quinoa and bulgur wheat in a pot andcook until the water has evaporated. Cover with a lid and allow to steam for 30minutes
  • Marinate chicken in a mixture of olive oil,garlic, oregano, and lemon juice for a minimum of 20 minutes
  • Cook the marinated chicken in a medium-hot panuntil both sides are golden brown and cooked through. Rest the cooked chickenfor a few minutes before slicing it.
  • In a bowl, add the cooked grains, and top withsliced chicken, cubed feta cheese, olives, cucumber, and tomato
