Ingredients
- 1 beef brisket (10-12 pounds)
- 1/2 cup coarse salt
- 1/4 cup black pepper
- 1/4 cup paprika
- 1/4 cup brown sugar
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 tablespoon cayenne pepper
- 4 cups wood chips (hickory or oak)
Instructions
- Preheat your smoker to 225°F.
- In a bowl, mix together salt, pepper, paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, and cayenne pepper
- Trim the excess fat from the brisket and rub the spice mixture all over it.
- Let the brisket sit at room temperature for 30 minutes to 1 hour.
- Soak wood chips in water for 30 minutes.
- Place the brisket on the smoker grate fat side up.
- Add the wood chips to the smoker.
- Smoke the brisket until the internal temperature reaches 165°F (about 8-10 hours).
- Wrap the brisket in foil and return to the smoker.
- Smoke until the internal temperature reaches 195°F (about 2-4 hours).
- Remove the brisket from the smoker and let it rest for 30 minutes.
- Slice against the grain and serve.
