Ingredients
- 1 lb ground beef
- 1 egg
- 1/4 cup almond flour
- 2 tbsp grated Parmesan cheese
- 1 tbsp chopped fresh parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper
- 2 medium zucchinis
- Olive oil
- Salt and pepper
- Marinara sauce (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the ground beef, egg, almond flour, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper.
- Using your hands, form the mixture into small meatballs.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until the meatballs are cooked through and lightly browned on the outside.
- While the meatballs are cooking, prepare the zucchini noodles. Use a spiralizer to cut the zucchinis into noodles.
- Heat some olive oil in a pan over medium-high heat.
- Add the zucchini noodles and cook for 3-4 minutes, or until they are just tender.
- Season the zucchini noodles with salt and pepper.
- Serve the meatballs with the zucchini noodles and marinara sauce (if desired).
