Ingredients
- 1 tablespoon olive oil
- 1 onion chopped
- 1 garlic clove minced
- 2 carrots sliced
- 1 rib celery sliced
- 2 cups cooked beef
- 6 cups of reduced-sodium beef broth
- 1 can petite diced tomatoes 14-15 oz, undrained
- Β½ green pepper diced
- β cup barley
- 1 tablespoon Worcestershire sauce
- ΒΌ teaspoon dried thyme
- 1 package beef gravy mix
- 1 bay leaf
- 2 tablespoons red wine optional
- 2 tablespoons fresh parsley or 2 teaspoons dried
- salt & pepper to taste
Instructions
- Begin by heating some oil in a large pot over medium heat. Add chopped onions and garlic to the pot, and cook until they have softened.
- Once the onions and garlic are softened, add the remaining ingredients to the pot. This includes chunks of beef, barley, vegetables such as carrots and celery, and any seasonings you prefer. Pour in enough water or beef broth to cover all the ingredients and bring the mixture to a boil.
- Once the mixture is boiling, reduce the heat to a simmer and cover the pot. Let it cook for about 40-50 minutes or until the barley is cooked and the beef is tender. It's important to keep the pot covered so that the soup doesn't lose too much liquid.
- Finally, once the soup is cooked, remove the bay leaf and serve it hot. You can also store any leftovers in the fridge for a delicious and comforting meal later on.
