Ingredients
- 2 cup cooked and shredded chicken breast
- 1 cup seedless red grapes, halved
- 1/2 cup sliced almonds
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
For the dressing:
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 2 tbsp fresh lemon juice
- 1 tbsp honey
- 1 tbsp curry powder
- 1/2 tsp ground ginger
- 1/4 tsp garlic powder
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, combine the cooked and shredded chicken breast, halved red grapes, slicedalmonds, chopped green onions, and chopped cilantro
- In a separate small mixing bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, honey, currypowder, ground ginger, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the chicken mixture and toss well to combine.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving to allow the flavors tomeld together
- Serve chilled.
