Ingredients
Forthe grains
- ¾ cup quinoa
- ¾ cup bulgur wheat
- 3 cup water/stock
- 1 tsp salt
Forthe chicken
- 4 chicken breasts (skinless and boneless)
- 2 tbsps olive oil
- 3 tbsps lemon juice
- 3 garlic cloves crushed
- 2 tsp oregano
- 2 tsp salt
- 1 tsp black pepper
Forthe grain bowls
- tzatzikisauce
- Fetacheese cubed
- Kalamataolives
- Slicedcucumber
- Halvedcherry tomatoes
Instructions
- Combine quinoa and bulgur wheat in a pot andcook until the water has evaporated. Cover with a lid and allow to steam for 30minutes
- Marinate chicken in a mixture of olive oil,garlic, oregano, and lemon juice for a minimum of 20 minutes
- Cook the marinated chicken in a medium-hot panuntil both sides are golden brown and cooked through. Rest the cooked chickenfor a few minutes before slicing it.
