Ingredients
- 4 large vine tomatoes, cut into irregular wedges
- 1 cucumber, peeled, deseeded, then roughly chopped
- ½ a red onion thinly sliced
- 16 Kalamata olives
- 1 tsp dried oregano
- 85g feta cheese, cut into chunks (barrel-matured feta is the best)
- 4 tbsp Greek extra virgin olive oil
Instructions
- Cut 4 large vine tomatoes into wedges and chop 1 peeled and deseeded cucumber. Thinly slice 1/2 a red onion and add it to a large bowl along with the tomatoes, cucumber, 16 Kalamata olives, 1 tsp of dried oregano, 85g of feta cheese chunks, and 4 tbsp of Greek extra virgin olive oil.
- Lightly season the salad with salt and black pepper. Serve the salad with some crusty bread on the side to soak up all the delicious juices.
