Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.
- Place the chicken breasts in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and shake to coat the chicken evenly with the marinade. Refrigerate for at least 30 minutes, or up to 24 hours.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the excess marinade. Place the chicken on the grill and cook for 6 to 8 minutes per side, or until the chicken is cooked through and no longer pink in the center
- Let the chicken rest for 5 minutes before slicing and serving.
