Ingredients
  

  • 1 lb ground beef
  • 1 egg
  • 1/4 cup almond flour
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper
  • 2 medium zucchinis
  • Olive oil
  • Salt and pepper
  • Marinara sauce (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together the ground beef, egg, almond flour, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper.
  • Using your hands, form the mixture into small meatballs.
  • Place the meatballs on a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes, or until the meatballs are cooked through and lightly browned on the outside.
  • While the meatballs are cooking, prepare the zucchini noodles. Use a spiralizer to cut the zucchinis into noodles.
  • Heat some olive oil in a pan over medium-high heat.
  • Add the zucchini noodles and cook for 3-4 minutes, or until they are just tender.
  • Season the zucchini noodles with salt and pepper.
  • Serve the meatballs with the zucchini noodles and marinara sauce (if desired).
