Paleo Almond Flour Pancakes

Ingredients
  

  • 1 cup almond flour
  • 2 eggs
  • 1/4 cup unsweetened almond milk
  • 1 tbsp coconut flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Coconut oil or butter for cooking

Instructions
 

  • In a mixing bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  • In a separate bowl, beat the eggs and add in the almond milk and vanilla extract. Whisk until combined.
  • Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
  • Heat a non-stick skillet or griddle over medium heat. Add a tablespoon of coconut oil or butter to the pan and allow to melt
  • Spoon 1/4 cup of the batter onto the pan for each pancake. Cook for 2-3 minutes on one side, or until the edges start to dry and bubble, then flip and cook for another 1-2 minutes on the other side
  • Repeat with the remaining batter, adding more oil or butter to the pan as needed.
  • Serve with your favorite toppings, such as fresh berries, nut butter, or coconut cream.
