Ingredients
- 1 cup almond flour
- 2 eggs
- 1/4 cup unsweetened almond milk
- 1 tbsp coconut flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
- Coconut oil or butter for cooking
Instructions
- In a mixing bowl, whisk together almond flour, coconut flour, baking powder, and salt.
- In a separate bowl, beat the eggs and add in the almond milk and vanilla extract. Whisk until combined.
- Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
- Heat a non-stick skillet or griddle over medium heat. Add a tablespoon of coconut oil or butter to the pan and allow to melt
- Spoon 1/4 cup of the batter onto the pan for each pancake. Cook for 2-3 minutes on one side, or until the edges start to dry and bubble, then flip and cook for another 1-2 minutes on the other side
- Repeat with the remaining batter, adding more oil or butter to the pan as needed.
- Serve with your favorite toppings, such as fresh berries, nut butter, or coconut cream.
