Ingredients
  

  • 2 cups water
  • 1 cup quinoa
  • ¼ cup extra-virgin olive oil
  • 2 limes, juiced
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes, or more to taste
  • 1 ½ cups halved cherry tomatoes
  • 1 (15-ounce) can of black beans, drained and rinsed
  • 5 green onions, finely chopped
  • ¼ cup chopped fresh cilantro
  • Salt and ground black pepper to taste

Instructions
 

  • Begin by boiling water and quinoa in a saucepan .Reduce heat to medium-low, cover, and let it simmer for about 10 to 15 minutes or until the water is absorbed and the quinoa is tender. Once done, set it aside to cool.
  • While the quinoa is cooling, whisk together the olive oil, lime juice, cumin, salt, and red pepper flakes in a small bowl to make the dressing.
  • Next, combine the cooled quinoa with tomatoes, black beans, and green onions in a large bowl. Pour the dressing over the quinoa mixture and toss it gently to coat all the ingredients. Then, stir in the cilantro and season with salt and black pepper.
  • Finally, the quinoa salad is ready to serve. You can serve it immediately or chill it in the refrigerator for a few hours before serving. Enjoy your delicious and healthy quinoa salad!
