Ingredients
  

  • 1 large eggplant, diced
  • 2 zucchinis, diced
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 4 cloves garlic, minced
  • 4 ripe tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat oven to 375°F.
  • In a large skillet, heat olive oil over medium-high heat. Add onion and garlic and cook until onion istranslucent, about 5 minutes
  • Add diced eggplant and cook for 10 minutes, stirring occasionally.
  • Add zucchinis, red and yellow bell peppers and cook for another 10 minutes.
  • Add diced tomatoes, tomato paste, thyme, basil, salt and pepper. Stir well.
  • Transfer the mixture to a large oven-safe dish and bake in the preheated oven for 30-40 minutes or untilvegetables are tender
  • Serve hot, garnished with fresh basil leaves.
