Ingredients
- 1 large eggplant, diced
- 2 zucchinis, diced
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 4 cloves garlic, minced
- 4 ripe tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 375°F.
- In a large skillet, heat olive oil over medium-high heat. Add onion and garlic and cook until onion istranslucent, about 5 minutes
- Add diced eggplant and cook for 10 minutes, stirring occasionally.
- Add zucchinis, red and yellow bell peppers and cook for another 10 minutes.
- Add diced tomatoes, tomato paste, thyme, basil, salt and pepper. Stir well.
- Transfer the mixture to a large oven-safe dish and bake in the preheated oven for 30-40 minutes or untilvegetables are tender
- Serve hot, garnished with fresh basil leaves.
