Ingredients
  

  • 1 beef brisket (10-12 pounds)
  • 1/2 cup coarse salt
  • 1/4 cup black pepper
  • 1/4 cup paprika
  • 1/4 cup brown sugar
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 tablespoon cayenne pepper
  • 4 cups wood chips (hickory or oak)

Instructions
 

  • Preheat your smoker to 225°F.
  • In a bowl, mix together salt, pepper, paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, and cayenne pepper
  • Trim the excess fat from the brisket and rub the spice mixture all over it.
  • Let the brisket sit at room temperature for 30 minutes to 1 hour.
  • Soak wood chips in water for 30 minutes.
  • Place the brisket on the smoker grate fat side up.
  • Add the wood chips to the smoker.
  • Smoke the brisket until the internal temperature reaches 165°F (about 8-10 hours).
  • Wrap the brisket in foil and return to the smoker.
  • Smoke until the internal temperature reaches 195°F (about 2-4 hours).
  • Remove the brisket from the smoker and let it rest for 30 minutes.
  • Slice against the grain and serve.
