Spanakopita (Spinach Pie)

Ingredients
- 1 lb spinach leaves, chopped
- 1 cup crumbled feta cheese
- 4 green onions, chopped
- 1/4 cup chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup (1 stick) unsalted butter, melted
- 16 sheets phyllo dough, thawed
Instructions
- Preheat oven to 375°F.
- In a large bowl, combine spinach, feta cheese, green onions, dill, parsley, garlic, eggs, salt, and black pepper.
- Brush a 9-inch square baking dish with melted butter.
- Lay one sheet of phyllo dough in the dish and brush with melted butter. Repeat with 7 more sheets, brushingeach with butter.
- Spread the spinach mixture evenly over the phyllo layers.
- Lay a sheet of phyllo over the spinach mixture and brush with melted butter. Repeat with 7 more sheets,brushing each with butter.
- Cut the spanakopita into squares or diamonds with a sharp knife.
- Bake for 35-40 minutes or until the top is golden brown.
- Serve warm or at room temperature.
