Spanakopita (Spinach Pie)

Ingredients
  

  • 1 lb spinach leaves, chopped
  • 1 cup crumbled feta cheese
  • 4 green onions, chopped
  • 1/4 cup chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup (1 stick) unsalted butter, melted
  • 16 sheets phyllo dough, thawed

Instructions
 

  • Preheat oven to 375°F.
  • In a large bowl, combine spinach, feta cheese, green onions, dill, parsley, garlic, eggs, salt, and black pepper.
  • Brush a 9-inch square baking dish with melted butter.
  • Lay one sheet of phyllo dough in the dish and brush with melted butter. Repeat with 7 more sheets, brushingeach with butter.
  • Spread the spinach mixture evenly over the phyllo layers.
  • Lay a sheet of phyllo over the spinach mixture and brush with melted butter. Repeat with 7 more sheets,brushing each with butter.
  • Cut the spanakopita into squares or diamonds with a sharp knife.
  • Bake for 35-40 minutes or until the top is golden brown.
  • Serve warm or at room temperature.
