Ingredients
- 2 large sweet potatoes, peeled and diced
- 2 apples, peeled, cored, and diced
- 4 slices of bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- tsp dried thyme
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, cook the chopped bacon over medium-high heat until crispy. Remove the bacon from the pan and set it aside on a paper towel-lined plate.
- Add the onion to the pan with the bacon fat and cook until softened, about 5 minutes. Add the garlic and cook for another minute.
- Add the diced sweet potatoes to the pan and cook for 5-7 minutes, stirring occasionally, until they start to soften
- Add the diced apples, paprika, thyme, salt, and pepper to the pan and cook for another 5 minutes, or until the sweet potatoes and apples are tender
- Add the bacon back to the pan and stir to combine.
- Transfer the mixture to a baking dish and bake for 15-20 minutes, until the top is lightly browned and crispy.
- Serve hot and enjoy!
