Ingredients
  

  • 2 tablespoon butter
  • 2 tablespoon olive oil
  • 8 oz mushrooms
  • 3 thyme sprigs, chopped
  • 10-12 Young broccoli stems
  • 8 8 eggs
  • â…“ cup heavy cream
  • 3 cloves garlic, sliced
  • 2 tablespoon parsley,chopped
  • 1 teaspoon lemon zest
  • ½ teaspoon red chili flakes
  • 2 cups fresh baby spinach
  • ½ cup feta cheese

Instructions
 

  • Cut the mushrooms and broccoli into small, bite-sized pieces.
  • In a large skillet that is safe to use in an oven, heat the butter and olive oil over medium heat.
  • Add the broccoli stems to the skillet and cook, stirring regularly, for 4-5 minutes.
  • Next, add the mushrooms to the skillet and continue to cook for an additional 4-5 minutes.
  • Season the vegetables with salt and pepper and add the spinach and garlic to the skillet. Cook for 1-2 minutes until the flavours have combined and the spinach has wilted.
