Zest of 1 lemon

Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, whisk together the flour and powdered sugar until well combined.
Cut in the butter using a pastry cutter or your fingers until the mixture is crumbly.
Press the mixture into the bottom of a 9x13 inch baking dish.
Bake for 20 minutes or until the edges are lightly browned.
In a large mixing bowl, beat the eggs until light and frothy.
Add in the granulated sugar, flour, baking powder, and salt, and mix until well combined.
Stir in the lemon juice and zest.
Pour the mixture over the baked crust.
Bake for an additional 20-25 minutes or until the filling is set and the edges are lightly browned.
Allow the bars to cool completely in the baking dish.
Once cooled, cut the bars into squares and dust with powdered sugar.
