Deliciously Soft, Moist, and Buttery Lemon Bars

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, at room temperature
  • 3 large eggs
  • 1 and 1/2 cups granulated sugar
  • 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup lemon juice
  • Zest of 1 lemon
  • Powdered sugar, for dusting


  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour and powdered sugar until well combined.
  • Cut in the butter using a pastry cutter or your fingers until the mixture is crumbly.
  • Press the mixture into the bottom of a 9x13 inch baking dish.
  • Bake for 20 minutes or until the edges are lightly browned.
  • In a large mixing bowl, beat the eggs until light and frothy.
  • Add in the granulated sugar, flour, baking powder, and salt, and mix until well combined.
  • Stir in the lemon juice and zest.
  • Pour the mixture over the baked crust.
  • Bake for an additional 20-25 minutes or until the filling is set and the edges are lightly browned.
  • Allow the bars to cool completely in the baking dish.
  • Once cooled, cut the bars into squares and dust with powdered sugar.
