Instructions
Preheat oven to 375°F (190°C).
Sprinkle eggplant with salt and let sit for 30 minutes. Rinse and pat dry.
Heat a large skillet over medium heat. Add ground lamb and cook until browned.
Add onion and garlic to the skillet with the lamb and cook until onion is translucent.
Add diced tomatoes, tomato paste, oregano, cinnamon, salt, and pepper to the skillet. Simmer for 10 minutes.
In a separate saucepan, melt butter over medium heat. Add flour and whisk until smooth.
Gradually add milk, whisking constantly until mixture thickens.
Remove from heat and add Parmesan cheese, egg yolks, nutmeg, salt, and pepper. Stir until smooth.
Grease a 9x13 inch baking dish. Layer eggplant slices on the bottom.
Pour the lamb mixture over the eggplant layer.
Top with the white sauce.
Bake for 45 minutes or until top is golden brown.
Let cool for 10-15 minutes before serving.
