  • 1 large eggplant, sliced into rounds
  • 1 pound ground lamb
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can14.5 ounces) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cinnamon
  • Salt and pepper
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cup milk
  • 1 cup grated Parmesan cheese
  • 2 egg yolks
  • 1/4 teaspoon nutmeg


  • Preheat oven to 375°F (190°C).
  • Sprinkle eggplant with salt and let sit for 30 minutes. Rinse and pat dry.
  • Heat a large skillet over medium heat. Add ground lamb and cook until browned.
  • Add onion and garlic to the skillet with the lamb and cook until onion is translucent.
  • Add diced tomatoes, tomato paste, oregano, cinnamon, salt, and pepper to the skillet. Simmer for 10 minutes.
  • In a separate saucepan, melt butter over medium heat. Add flour and whisk until smooth.
  • Gradually add milk, whisking constantly until mixture thickens.
  • Remove from heat and add Parmesan cheese, egg yolks, nutmeg, salt, and pepper. Stir until smooth.
  • Grease a 9x13 inch baking dish. Layer eggplant slices on the bottom.
  • Pour the lamb mixture over the eggplant layer.
  • Top with the white sauce.
  • Bake for 45 minutes or until top is golden brown.
  • Let cool for 10-15 minutes before serving.
