of tuna, drained

small red potatoes, cooked and halved

hard-boiled
eggs, peeled and halved

green beans, trimmed and blanched

cup
cherry tomatoes, halved

Niçoise olives

tablespoons
capers
For the dressing:
1/4
cup
extra-virgin olive oil

tablespoons
red wine vinegar
1
tablespoon
Dijon mustard

clove
garlic, minced
Salt and black pepper, to taste
Instructions
In a large bowl, toss the mixed greens with the dressing until coated.
Divide the greens among four plates.
Top each plate with the tuna, red potatoes, hard-boiled eggs, green beans, cherry tomatoes, Niçoise olives,and capers.
Drizzle additional dressing over each salad, as desired.
Serve immediately.
