ounce can crushed tomatoes

cup coconut milk

cup chicken or vegetable broth

tablespoons fresh basil leaves, chopped
Salt and pepper, to taste
Instructions
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft and fragrant.
Add the crushed tomatoes, coconut milk, and broth to the pot and bring to a simmer.
Allow the soup to simmer for about 20-25 minutes, stirring occasionally.
Remove the soup from the heat and add the chopped basil.
Using an immersion blender or a regular blender, puree the soup until smooth.
Season with salt and pepper to taste.
Serve hot and enjoy!
