lb beef stew meat, cut into bite-sized pieces
1
onion, chopped
1
tbsp vegetable oil
4
cups beef broth
2
cups plain yogurt
2
tbsp cornstarch
1/4
cup chopped fresh parsley
Salt and pepper, to taste
Cooked rice, for serving
Instructions
In a large pot or Dutch oven, heat the oil over medium heat. Add the beef and cook until browned on allsides, about 5 minutes.
Add the onion and cook until softened, about 5 minutes more.
Pour in the beef broth and bring to a boil. Reduce heat to low and simmer, covered, for 1-2 hours, or untilthe beef is tender.
In a separate bowl, whisk together the yogurt and cornstarch until smooth.
Gradually add the yogurt mixture to the pot, stirring constantly.
Cook over low heat for another 10-15 minutes, until the sauce has thickened.
Stir in the parsley and season with salt and pepper to taste.
Serve hot over cooked rice.
