  • 1 lb beef stew meat, cut into bite-sized pieces
  • 1 onion, chopped
  • 1 tbsp vegetable oil
  • 4 cups beef broth
  • 2 cups plain yogurt
  • 2 tbsp cornstarch
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste
  • Cooked rice, for serving


  • In a large pot or Dutch oven, heat the oil over medium heat. Add the beef and cook until browned on allsides, about 5 minutes.
  • Add the onion and cook until softened, about 5 minutes more.
  • Pour in the beef broth and bring to a boil. Reduce heat to low and simmer, covered, for 1-2 hours, or untilthe beef is tender.
  • In a separate bowl, whisk together the yogurt and cornstarch until smooth.
  • Gradually add the yogurt mixture to the pot, stirring constantly.
  • Cook over low heat for another 10-15 minutes, until the sauce has thickened.
  • Stir in the parsley and season with salt and pepper to taste.
  • Serve hot over cooked rice.
