
Shakriya (Beef And Yogurt Stew)

Ingredients
- 1 lb beef stew meat, cut into bite-sized pieces
- 1 onion, chopped
- 1 tbsp vegetable oil
- 4 cups beef broth
- 2 cups plain yogurt
- 2 tbsp cornstarch
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- Cooked rice, for serving
Instructions
- In a large pot or Dutch oven, heat the oil over medium heat. Add the beef and cook until browned on allsides, about 5 minutes.
- Add the onion and cook until softened, about 5 minutes more.
- Pour in the beef broth and bring to a boil. Reduce heat to low and simmer, covered, for 1-2 hours, or untilthe beef is tender.
- In a separate bowl, whisk together the yogurt and cornstarch until smooth.
- Gradually add the yogurt mixture to the pot, stirring constantly.
- Cook over low heat for another 10-15 minutes, until the sauce has thickened.
- Stir in the parsley and season with salt and pepper to taste.
- Serve hot over cooked rice.
