Ingredients
  

  • 4 cup watermelon, cubed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup extra-virgin olive oil
  • 2 tsp balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine watermelon, feta cheese, and chopped mint leaves
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  • Pour the dressing over the watermelon mixture and toss gently to coat.
  • Serve chilled or at room temperature. Enjoy!
