Ingredients
- 4 cup watermelon, cubed
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh mint leaves
- 1/4 cup extra-virgin olive oil
- 2 tsp balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine watermelon, feta cheese, and chopped mint leaves
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to make the dressing.
- Pour the dressing over the watermelon mixture and toss gently to coat.
