Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 28 ounce can crushed tomatoes
- 1 cup coconut milk
- 1 cup chicken or vegetable broth
- 2 tablespoons fresh basil leaves, chopped
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft and fragrant.
- Add the crushed tomatoes, coconut milk, and broth to the pot and bring to a simmer.
- Allow the soup to simmer for about 20-25 minutes, stirring occasionally.
- Remove the soup from the heat and add the chopped basil.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Season with salt and pepper to taste.
