Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 3/4 cup unsalted butter, at room temperature
- 3 large eggs
- 1 and 1/2 cups granulated sugar
- 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup lemon juice
- Zest of 1 lemon
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour and powdered sugar until well combined.
- Cut in the butter using a pastry cutter or your fingers until the mixture is crumbly.
- Press the mixture into the bottom of a 9x13 inch baking dish.
- Bake for 20 minutes or until the edges are lightly browned.
- In a large mixing bowl, beat the eggs until light and frothy.
- Add in the granulated sugar, flour, baking powder, and salt, and mix until well combined.
- Stir in the lemon juice and zest.
- Pour the mixture over the baked crust.
- Bake for an additional 20-25 minutes or until the filling is set and the edges are lightly browned.
- Allow the bars to cool completely in the baking dish.
- Once cooled, cut the bars into squares and dust with powdered sugar.
