Ingredients
- 6 large bell peppers
- 1 pound ground beef
- 1 onion, chopped
- 1 clove garlic, minced
- 1 can 14.5 oz diced tomatoes, drained
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes. Set the peppers aside.
- In a large skillet, cook the ground beef over medium heat until browned. Drain off any excess fat.
- Add the onion and garlic to the skillet and cook until the onion is tender, about 5 minutes.
- Add the diced tomatoes, cooked rice, salt, black pepper, oregano, basil, and red pepper flakes to the skillet.Stir to combine.
- Cook the mixture for 5 minutes, or until heated through.
- Stuff the bell peppers with the beef and rice mixture.
- Place the stuffed peppers in a baking dish and sprinkle with Parmesan and mozzarella cheese.
- Bake for 30-35 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve hot.
