Ingredients
- 1 large eggplant, sliced into rounds
- 1 pound ground lamb
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can14.5 ounces) diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon cinnamon
- Salt and pepper
- 1/4 cup butter
- 1/4 cup flour
- 2 cup milk
- 1 cup grated Parmesan cheese
- 2 egg yolks
- 1/4 teaspoon nutmeg
Instructions
- Preheat oven to 375°F (190°C).
- Sprinkle eggplant with salt and let sit for 30 minutes. Rinse and pat dry.
- Heat a large skillet over medium heat. Add ground lamb and cook until browned.
- Add onion and garlic to the skillet with the lamb and cook until onion is translucent.
- Add diced tomatoes, tomato paste, oregano, cinnamon, salt, and pepper to the skillet. Simmer for 10 minutes.
- In a separate saucepan, melt butter over medium heat. Add flour and whisk until smooth.
- Gradually add milk, whisking constantly until mixture thickens.
- Remove from heat and add Parmesan cheese, egg yolks, nutmeg, salt, and pepper. Stir until smooth.
- Grease a 9x13 inch baking dish. Layer eggplant slices on the bottom.
- Pour the lamb mixture over the eggplant layer.
- Top with the white sauce.
- Bake for 45 minutes or until top is golden brown.
- Let cool for 10-15 minutes before serving.
