Ingredients
For the cupcakes:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 1/2 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
For the cream cheese frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
- In another mixing bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla extract, and whitevinegar until smooth.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Spoon the batter into the cupcake liners, filling them about 2/3 of the way full.
- Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cupcakes from the oven and allow them to cool completely before frosting.
For the cream cheese frosting:
- In a large mixing bowl, beat the cream cheese and butter together until smooth.
- Add the powdered sugar and vanilla extract, and continue to beat until the frosting is smooth and creamy.
- Frost the cupcakes as desired and enjoy!
